Honey-Maple Bacon-Wrapped Acorn Squash: Sweet, Savory & Oh So Cozy! 🍁🥓
Foxfire Kitchen | Foxfire & Freeways
Remember that acorn squash I was planning to make for our Samhain dinner?
Well, I finally got around to making it! 😂
Sometimes things don’t quite go according to plan in Foxfire Kitchen, especially when you’ve got a whole feast going on and only so much time in the day. So the acorn squash got pushed aside for another night.
And honestly? I’m glad I waited because this turned out absolutely delicious!
I wanted something that had a little sweetness, a little savory goodness, and plenty of those cozy autumn flavors. So naturally, I grabbed some butter, honey, maple sugar crunch, and bacon.
Because let’s face it, bacon makes just about everything better! 😂
The result was a beautifully tender acorn squash with buttery, honey-maple sweetness and bacon that came out with just the right balance of softness and crispiness.
Best of all? It was incredibly easy to make!
🍁 Honey-Maple Bacon-Wrapped Acorn Squash
Prep Time: 10–15 minutes
Cook Time: Approximately 1 hour
Oven Temperature: 350°F
Servings: 2 halves
Ingredients
- 1 medium acorn squash
- Butter, enough to coat the inside and edges
- Honey, for drizzling
- Maple sugar crunch, to taste
- Bacon slices, enough to wrap the squash halves
I didn’t measure everything precisely. Sometimes the best kitchen creations come from following your taste buds rather than measuring spoons!
Instructions
- Preheat the oven to 350°F.
- Prepare the squash. Carefully cut the acorn squash in half and scoop out the seeds and stringy center.
- Add the butter. Spread butter around the cut edges and inside each squash half, making sure to coat everything nicely.
- Drizzle with honey. Pour honey over the buttered squash, allowing some to settle into the hollowed-out centers.
- Add the maple sweetness. Sprinkle maple sugar crunch over the squash to your liking.
- Bring on the bacon! Arrange the bacon slices around the squash halves, wrapping them so they can cook alongside the squash and add that wonderful savory flavor. I did 3 horizontal strips then I did one lengthwise for a total of 4 then turned the squash upside down on it then used toothpicks to hold the strips to the backside of the squash.
- Bake. Place the squash halves in a baking dish and bake for approximately one hour, or until the squash is fork-tender and the bacon is cooked to your liking.
- Serve and enjoy! Let the squash cool slightly before digging in.
How Did It Turn Out?
Oh, it was GOOD!
The squash came out super tender, to the point where I could easily scoop the flesh right out of the skin.
The butter and honey gave it a lovely richness, while the maple sugar crunch added another layer of sweetness.
And the bacon?
Perfectly soft with just enough crispiness!
That sweet-and-savory combination really brought everything together.
It was one of those simple dishes that didn’t require a whole lot of effort but tasted like something you’d want to make again.
A Few Foxfire Kitchen Notes 🦊
If you decide to give this recipe a try, here are a few things worth keeping in mind:
- Squash sizes vary. Larger acorn squash may need additional baking time. Check tenderness with a fork.
- Watch the bacon. If you prefer extra-crispy bacon, you can finish it briefly under the broiler, keeping a close eye on the honey and sugar so they don’t burn.
- Make it your own. A little cinnamon, nutmeg, or even a pinch of cayenne could be a fun addition.
- Don’t waste the seeds! Acorn squash seeds can be cleaned, seasoned, and roasted for a crunchy snack.
Better Late Than Never!
This was originally supposed to accompany our traditional Irish stew, soda bread, and apple cinnamon cake for Samhain.
But sometimes a recipe deserves its own evening in the spotlight!
And this one certainly earned it.
I love experimenting with seasonal ingredients, especially when I can turn something simple into a comforting homemade dish.
So here’s to another successful little adventure in Foxfire Kitchen!
Sweet, savory, buttery, and wrapped in bacon.
What more could a person ask for? 😂🦊🧡
