Foxfire Kitchen: Tater Tot Casserole with a Little Mushroom Magic 🍄🦊
A little of this, a little of that, and season with your heart. 🧡
Tonight’s dinner was another one of my comfort food favorites: tater tot casserole with a homemade ground beef sauce loaded with fresh baby bella mushrooms, onions, and plenty of garlic!
And when I say plenty of garlic, I mean EIGHT cloves. Because apparently, we’re not taking any chances with vampires around here. 😂
I make tater tot casserole a couple of times a year, and somehow, I never seem to make it the same way twice.
There’s always something different. A little more of this, a little less of that, or an ingredient that catches my eye and makes me think, Hmm, I wonder how that would taste in there?
So naturally, this isn’t one of those recipes that’s been perfected down to the last teaspoon. It’s more of a guideline for whatever deliciousness happens in my kitchen that day.
And tonight’s version? Really, really good!
🍄 Tater Tot Casserole with Mushroom, Garlic & Onion Ground Beef Sauce
Ingredients
- 1 lb ground beef
- Approximately 2 cups fresh baby bella mushrooms, sliced or roughly chopped
- 1 large onion, chopped
- 8 cloves fresh garlic, minced
- 2 cans condensed cream of mushroom soup (10.5 oz each)
- Roughly 2 tablespoons horseradish mustard
- Worcestershire sauce, to taste (roughly 2 tablespoons if you like a starting point)
- Salt and freshly cracked black pepper, to taste
- A dash of black truffle salt
- A dash of Korean red pepper flakes or powder
- Butter for sautéing
- 1 bag frozen tater tots (approximately 28–32 oz, or enough to cover your casserole)
- Shredded cheddar cheese or grated Parmesan cheese, as much as your heart desires
- Nonstick cooking spray
Let’s Get Cooking!
1. Preheat That Oven!
Preheat your oven to 350°F.
While that’s heating up, get your ingredients chopped, minced, and ready to go.
2. Start with the Good Stuff
In a large, shallow skillet, melt a little butter over medium heat.
Add your chopped onion and minced garlic, stirring occasionally for about 5 minutes until the onions begin to soften and everything smells wonderful.
Next, add your baby bella mushrooms and stir everything together so the mushrooms get nicely coated in that buttery, garlicky goodness.
Let them cook for another 5 minutes or so, allowing the mushrooms to soften and release some of their moisture.
3. Bring on the Beef!
Add your ground beef to the skillet, breaking it apart with your spoon or spatula.
Let it cook for a couple of minutes before adding your horseradish mustard, Worcestershire sauce, salt, black pepper, black truffle salt, and Korean red pepper.
Give everything a good stir!
Continue cooking, breaking up the beef and stirring occasionally, until it’s completely browned and cooked through.
Drain any excess grease if needed.
4. Make That Mushroom Sauce
Once the beef is cooked, remove the skillet from the heat.
Add both cans of condensed cream of mushroom soup and mix everything thoroughly.
You should end up with a thick, hearty, mushroom-filled beef sauce.
And yes, this is where I usually sneak a little taste to see whether it needs another pinch of seasoning. 😂
5. Build Your Casserole
Lightly coat a 9×13-inch glass baking dish with nonstick cooking spray.
Spread your beef and mushroom mixture evenly across the bottom.
Now comes the fun part: the tater tots!
Arrange your frozen tater tots across the entire surface however you like.
You can line them up neatly in rows or just scatter them around. I’m not judging anybody’s tater tot organization skills! Haha!
Just make sure you’ve got a good layer covering the whole casserole.
Sprinkle some cheddar or Parmesan cheese over the top.
6. Into the Oven It Goes!
Place the casserole in your preheated oven and bake for approximately 35–45 minutes, or until the filling is bubbling and the tater tots are thoroughly heated and golden brown.
Rotate the baking dish halfway through for more even cooking.
Start checking around the 35-minute mark. Depending on your oven and the brand of tater tots, it may need a little longer.
If you’d like extra-crispy tots, give them a few more minutes in the oven.
7. The Cheesy Finish
Once everything is hot and golden, remove the casserole from the oven.
Add a little more cheese if your heart desires. You can even pop it back into the oven briefly to melt that extra cheese.
Let it rest for about 5 minutes before serving.
And there you have it!
A delicious, hearty, homemade tater tot casserole!
🦊 A Few Foxfire Kitchen Notes
The mushrooms: I prefer fresh baby bellas because they add a nice earthy flavor and texture. You can chop them smaller if you’re feeding someone who isn’t a huge mushroom fan.
The mustard: Horseradish mustard adds a little extra kick without necessarily making the whole dish spicy. It’s one of those ingredients that gives the sauce a little something special.
The seasoning: Between the black truffle salt, Worcestershire sauce, and Korean red pepper, there’s plenty of flavor going on. Start light and adjust to your liking.
The cheese: Cheddar gives you that classic cheesy casserole experience, while Parmesan adds a slightly nuttier, saltier finish. Either works!
A Recipe That’s Never Quite the Same Twice
That’s one thing about cooking in my kitchen. I don’t always follow a recipe, even when it’s something I’ve made dozens of times.
Sometimes I change the seasonings. Sometimes I add different ingredients. And sometimes I just throw things together and hope for the best!
Fortunately, tonight was definitely one of those Oh yeah, we’re making this again meals.
Will it taste exactly the same next time?
Probably not. 😂
But that’s part of the fun!
If you decide to give this version a try, let me know how it turns out. And if you put your own spin on it, I’d love to hear what you changed!
Because here at Foxfire Kitchen, there’s always room for a little creativity.
A little of this, a little of that, and season with your heart.
